Fir honey, also known as forest honey, has a strong and characteristic flavor. It can be slightly resinous and have earthy notes. The taste depends heavily on the plants that grow around the bees, especially firs and other conifers.
Consistency:
The consistency of fir honey is usually thick to viscous. This honey remains liquid for a very long time and only tends to crystallize late. If it does crystallize, fir honey can take on a granular structure.
Harvest time:
The harvest time is in late summer, when the bees collect the honeydew produced by aphids sucking on the fir trees. So-called honeydew producers.
