Consistency:

The consistency of fir honey is usually thick to viscous. This honey remains liquid for a very long time and only tends to crystallize late. If it does crystallize, fir honey can take on a granular structure.

Harvest time:

The harvest time is in late summer, when the bees collect the honeydew produced by aphids sucking on the fir trees. So-called honeydew producers.
